Hey dolls! Ever had those ripe mushy bananas in your kitchen that you just didn't know what to do with except throw away? Well I'm here to tell you that you don't have to throw them away and you can actually use them in my easy peasy yummy banana bread recipe. I made my banana bread with cinnamon and almonds but you can absolutely modify this recipe and customise it to your own taste. Anyway without rambling on too much; let's get into the recipe.
INGREDIENTS
1 and 1/2 cups of plain flour
1/2 teaspoon of baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup brown caster sugar
2-3 very ripe bananas (the riper the sweeter & more intense flavour you'll get)
2 eggs
1/2 cup vegetable oil
3-4 tablespoons water
1/2 cup flaked almonds
METHOD
Preheat your over to 180 degrees Celsius (350 degrees Fahrenheit)
Grease your bread-pan with vegetable oil and set aside.
Sift the dry ingredients through a sieve and place to one side.
Mush the bananas with a potato masher or fork until soft.
Add eggs, vegetable oil and water to the bananas and whisk until well mixed.
Fold the dry ingredients into the wet ingredients making sure to mix well but don't over mix as this will make for a tough and doughy bread.
Add half your almonds to the mixture and mix well.
Transfer your mixture to your bread-pan leaving about half an inch on the top for the bread to rise.
Top the mixture with the remaining almonds.
Place in the middle of your oven and bake for 45/50 mins or until a skewer placed in the middle comes out clean.
Once done, cool and enjoy!
